Eat the Challenge!

Since taking over the University's food service, Bon Appetit has participated in their company's annual Eat Local Challenge. This year is no different. During lunch on Tuesday, Sept. 28 the dining hall will serve food prepared from local ingredients produced within a 150-mile radius. Some of the local farms who are providing the ingredients include Herndon Family Farm, Maple View Farm, Crabb Family Farm, Celebrity Dairy and Whitley's Peanuts.

The day's menu includes: honey glazed rotisserie chicken, braised pork and purple hull peas, roasted butternut squash and goat cheese frittata, baked sweet potatoes with whipped honey butter, roasted peanuts in the shell and Asian pear aqua fresca.

Lunch for faculty and staff is $5.77. Make plans to join us for this sumptuous local feast!
